THE PROJECT
SPONTANEOUS FERMENTATION
We brew spontaneously fermented beers, ciders and hybrids. We do not use we don't use yeast, wild yeast or bacteria that come from laboratories, because we want our Surroundings to manifest themselves freely, without conditioning. It's more risky, but more beautiful.
.LOCAL AND SEASONAL INGREDIENTS
All the ingredients are organic or biodynamic and are produced by farmers and custodians of our territory, who are responsible for saving fruits and grains of ancient varieties from extinction. We always use them fresh, just picked. Also the wooden barrels come exclusively from Tuscan wineries.

IN THE CELLAR
The Cellar is open every day from Monday to Friday from 3 to 4.30 pm. During this time it is possible to access the cellar, which is also the tasting and sales area, with a view of the production area.
You will be served by our brewers so you can have a chat about the beers and the production processes.
.IN TAPROOM
A few minutes away from the cellar, in Colle Val d'Elsa, you will find our BREWERY | TAPROOM. A small place with 7 beers on tap and a nice counter where you can drink all the beers of Cantina Errante and some other local breweries, as well as an interesting selection of whiskies.
