+ La Malpolon - Farm on Mars?

Farm on Mars? is born from a special collaboration with our French friends at Brasserie La Malpolon. It is part of our Rustic project, meaning the beer is fermented with our own population of spontaneous fermentation microorganisms. In this case, however, they are joined by a saison yeast culture that Rémi from La Malpolon has been carefully cultivating for several years.
This makes the collaboration not only one between breweries, but also between microbial cultures—something we find particularly fascinating.
Alongside barley malt, the grist includes oak-smoked wheat malt, which offers a more delicate and elegant smokiness compared to the classic beech-smoked malt. We also chose to add smoked chestnuts to the mash, a historic specialty of our region. These chestnuts are dried for around 40 days in ancient stone buildings known as seccatoi, using chestnut wood—a truly unique and traditional process.
The result is a rustic yet not sour beer, dry and gently smoky, with a pleasant bitter finish. It combines the fruity notes of our spontaneous, evolving microflora with the fresh citrus character of the Malpolon saison yeast. Deep golden in color, it comes in at 8.2% ABV, yet remains surprisingly drinkable—perfect for the transition from the end of winter into early spring.
