Rustic Doll

This strong ale is inspired by some hop forward beers from the region of Flanders we all love. It was fermented in a open vessel by our evolutionary population of wild microorganisms that were left by spontaneous population in our cellar. It shows a thick and firm foam, a fruity and hoppy aroma and a rustic complexity in the taste. As it ages, the beer may develop a distinct level of sourness that adds to its complexity and character.
