Ka Saline 2025

Ka Saline 2025 is out today. Spring finally seems to be arrived, and before long here in Tuscany you’ll start seeing elderflowers blooming along the roads. Ka Saline has elderflowers we handpicked last year right around the brewery. We added them to a blend of spontaneously fermented beers (our perpetua Ka), aged in both barriques and tonneaux, along with rock salt from the Saline of Volterra. It’s released after just under a year of maturation. After a couple of vintages that we kept exclusively in cask, we’re really happy to finally have a small batch of bottles too.
