100% spontaneously fermented cider, blend of 4 ancient Tuscan apple, hanpicked in the apple farm “Camporbiano”, close to the brewery. Sourness is just spontaneous, no brett nor bacteria were added. Just apples and wood. Fermentation and maturation in ex Chianti Classico Oak barrels.
