stile: spontaneously fermented cider


We used ancient varieties of local Tuscan apples, from a mixed culture garden that our friend Ernesto takes care of. We picked the apples, crushed and pressed them, then racked the juice to ex wine oak barrels. A spontaneous fermentation occurred, thanks to the microflora that lives on the apple peels. A long maturation was conducted both in the barrel and in the bottle.
