Mirabolani 2024

Mirabolani 2024 is one of those beers that truly takes blood, sweat and tears to make. The process is long and labour-intensive, but the result makes every step worthwhile.
We began by fermenting the fresh fruit separately, starting with the "mirabolani" — wild plums that we handpick locally; it takes nearly half a day to harvest a single crate. We created a pied de cuve (a natural starter) with them, then added two other local ancient plum varieties: Sangue di Drago and Regina Claudia Verde.
Once the fruit fermentation was complete, we blended it with our spontaneous beer from coolship and Perpetua, aged in both barriques and stainless steel. The maceration continued for six months.
Before packaging, we dry-hopped selecting Vic Secret and Mosaic for their ability to complement and enhance the beer’s aromatic profile.
The fruit character is vibrant yet beautifully integrated. The beer remains elegant, with a refreshing brightness that keeps it lively. It was released in March 2026, exactly one year after packaging.
