Madreperle (Hilltop collab)

This Perle single hop saison is part of the Cantina Errante Rustic Project and was developed and brewed together with Conor from Hilltop Brewery. It shows a nice fruity and citrousy character, thanks both to yeast esters and Perle hop oils. Like the other beers of this project, it was fermented by an evolutionary population of wild microorganisms that were left by spontaneous fermentations in our cellar.
