This session ale is inspired by some hop forward gems of the nouvelle brewing vague on the French/Belgian border. It is brewed with wheat and oat, generously hopped with Czech hops and fermented in a open vessel by our evolutionary population of wild microorganisms that were left by spontaneous population in our cellar. It shows a rustic and hoppy aroma and a nice bitterness all along the taste. As it ages, the beer may develop a distinct level of sourness that adds to its complexity and character.
