Nontrebbio Cuvee 21/24

Nontrebbio Cuvée 21/24 is made with grapes from two different vintages —2021 and 2024— and through different processing and fermentation methods. The result is a beer that is both deep and fresh, intense yet highly drinkable.

In 2021, we harvested Trebbiano and Malvasia grapes from nearby vineyards and co-fermented them with beer wort. Part of this went into Nontrebbio 2021, while other barriques were left to rest for two more years and eventually became part of this beer.

Then, in 2024, we recovered beautiful Trebbiano and Vernaccia skins and macerated them in a blend of beers that had already been spontaneously fermented for about two years, partly using our perpetua method and partly from the coolship.
Finally, in 2024, we created the final blend.

In terms of grapes, three varietals are involved: Trebbiano, Malvasia, and Vernaccia. As for fermentation, three spontaneous processes were used: one part of the blend was fermented with fruit yeasts, one comes from the perpetua method, and one from the coolship.

The result is fresh and clean, yet long-lasting and intense, with subtle notes of wood. Those familiar with Nontrebbio 2021 may recognize certain similarities, but with added complexity and nuance.

I was released in Jan 2025 after 1 year of bottle/keg conditioning and ageing.
